Ousmane has just come back from harvesting tamarind beans. Tamarind trees are considered to be one of the most important and valued trees in West Africa. Every part of the plant is used, including the fruit, beans, flowers, leaves, wood, roots, and bark. The different parts of the tree are eaten, used in food preparation and preservation, and used as medicine and in holistic practices. When eaten, tamarind has  a sour, tart flavor.
